In 2015 consumers embraced vegetarian dishes, with “meat-free Mondays” on the rise throughout the country. But options for plant-based proteins were still largely limited to legumes, soy, seitan, and tempeh — products that have been around for decades. Expo East 2015 saw the rise of new, innovative meat replacement products pulling from global cultures — in particular, jackfruit. Research and analytics company SPINS writes that 2016 will be the year that new meat alternatives (such as jackfruit) take off and are adopted by the mainstream.
