Algae Cooking Club Unveils Two Infused Algae Oils With Eleven Madison Park's Daniel Humm
After more than a year in the making, Algae Cooking Club is unveiling two infused oils dreamed up by Chef Daniel Humm and his team at Eleven Madison Park. The brand’s latest additions, Gochugaru Chili Oil and Shiitake Mushroom Oil, will be available for purchase starting October 15th.
Each infused oil combines a distinctive blend of global spices and is crafted exactly as the team does at Eleven Madison Park. The oils are steeped, much like tea, but with high-quality culinary algae oil, simmered low and slow with a unique mix of spices for over eight hours. This slow infusion creates the rich, layered flavors reminiscent of dining at Eleven Madison Park.
"What excites me about working with algae oil is how clean and precise the flavors are,” said Chef Daniel Humm of Eleven Madison Park. “Every spice we use in these oils has a voice, and you can taste each one in perfect harmony. It’s a beautiful way to highlight ingredients at their best."

- Gochugaru Chili Oil - Add Aromatic Heat To Any Dish
- An aromatic gochugaru chili oil with notes of caraway, cinnamon, and star anise. Spicy, yet not overpowering. Crafted using nine whole spices, this infusion features balanced layers of warmth and spice, Making it the perfect drizzle to spice up eggs, elevate vinaigrettes, season soups, and, of course, take your pizza to the next level.
