Bring Home the Flavors of Oaxaca with Authentic Mole Sauces From ¡Ya Oaxaca!

¡Ya Oaxaca!, a family company dedicated to sharing the flavors of Oaxaca, introduces its line of traditional mole sauces, which are now available across the U.S. Created by celebrated Oaxacan-based chef Susana Trilling, ¡Ya Oaxaca!’s three heat-and-serve mole sauces reflect Susana’s 40+ years as a chef, locally sourced Oaxacan ingredients, and the company’s overarching mission to share the distinct flavors and culture of Oaxaca.

Made with locally grown ingredients, these rich and layered mole sauces are a well-balanced blend including dried and smoked chiles, nuts, seeds, spices, ripe tomatoes, tomatillos, house made chocolate, and criollo corn tortillas. Using Susana’s recipes, ¡Ya Oaxaca! mole sauces make the rich and complex flavors of Mexico’s culinary capital simple and approachable for the growing number of cooking and food enthusiasts looking for new international flavors and dishes. ¡Ya Oaxaca! mole sauces are Non-GMO project verified, gluten-free and vegan, and are available in three flavors:

  • Mole Negro, The “king of moles” – well-balanced, rich, and layered chile flavor
  • Mole Coloradito – Slightly sweet and vibrant chile flavor
  • Mole Rojo – Bright, picante chile flavor

Just in time to celebrate National Hispanic Heritage Month, ¡Ya Oaxaca! Mole Negro and Mole Rojo are now available at over 500 Whole Foods stores across the U.S., and all three sauces are also available at specialty food stores nationwide.

“We are honored and excited to be introducing ¡Ya Oaxaca! premium heat and serve mole sauces. Each jar of ¡Ya Oaxaca! mole reflects our deep love of the region and desire to share it with the world, from the rich, layered flavors of the sauce drawing from locally sourced maíz criollo, chilhuacle negro, wild garlic, and our homemade chocolate, to the traditional designs on the jar from Oaxacan artists Jacobo and Maria Angeles,” said Trilling. “Our moles reflect my 40+ years of working as a chef and the next generation of my family who had the vision to bring traditional Oaxacan mole sauces to tables, friends and families across the U.S.”

After three decades in Oaxaca, Mexico, teaching cooking classes at Seasons of My Heart, authoring multiple cookbooks, and hosting a PBS show, Susana Trilling is considered an authority on Oaxacan cuisine. In 1994, she published My Search for the Seventh Mole, A Story with Recipes from Oaxaca, Mexico. Her complex multi-ingredient mole sauces have attracted the attention of chefs worldwide, prompting a wholesale business. Now, she’s making her authentic Oaxacan mole sauces available to home cooks across the USA.
