Sold-Out Spark Pavilion, Interactive Fancy Bodega Elevate New Product Discovery at the 2026 Summer Fancy Food Show
The show, running June 28-30 in NYC, will offer new activations and exhibition areas to support product discovery for new and veteran attendees alike.
NEW YORK (June 9, 2026) – Enhanced product discovery is coming to the 2026 Summer Fancy Food Show. With several new activations, showcase areas, and experiences, the Specialty Food Association (SFA) will offer never-before-seen opportunities for attendees to foster connections, experience new flavors, and find inspiration around every corner.
Among the most exciting additions to this year’s Summer Fancy Food Show is the sold-out Spark Pavilion, a featured area for early-stage brands that are new to SFA shows. Located in Debut District, the Spark Pavilion offers emerging manufacturers a turnkey way to kick-start their trade show participation, while offering buyers, press, and investors first-look access to lesser-known products and exhibitors. More than 40 brands will participate in the Pavilion, showcasing energizing flavors, trending ingredients, and innovative products from a convenient high-protein couscous to freeze-dried coffee pods and many more.
SFA will also bring New York City food culture to the forefront with the new Fancy Bodega, an immersive, retail-inspired showcase where attendees can browse, touch, and scan featured exhibitor products organized by category. Once attendees scan an item, they’ll be able to connect directly with the brands, view company information, and find their booth at the show.

Attendees can also look forward to the following new and notable Summer Fancy Food Show activations:
- SenseMaxxing Experience: SFA's Trend of the Year for 2026, SenseMaxxing, will come to life in a pop-up activation designed by Brooklyn's own Museum of Food and Drink (MOFAD). Attendees can experience both the Smell Synth and the Tasting Wall to immerse themselves in this trend energizing the specialty food industry.
- Saudi Dates Pavilion: Presented by Saudi Dates, the national trademark and leading exporter of dates from the Kingdom of Saudi Arabia and Show Partner for the 2026 Summer Fancy Food Show, this pavilion will feature premium whole date varieties alongside value-added products such as date syrup, date paste, fillings, and chopped dates, widely used in bakery, confectionery, and functional food applications. With the demand for natural sweeteners on the rise, attendees can access an expanded look at and understanding of date varietals, unique tastes, applications, and nutritional profiles.
- Good Food Mercantile: Taste the latest products from values-based makers who have achieved Good Food Qualified status, a designation that confirms that the company has met high standards for outstanding taste, sustainability, and ingredient quality. Attendees can also explore the winners of the 2026 Good Food Awards, honoring products that exemplify outstanding taste, quality, and responsible production. The Good Food Mercantile will be open on Sunday, June 28 from 10 a.m. to 4 p.m.
