Farmers harvest sweet nectar from coconut flower blossoms, which is gently evaporated and dried under vacuum into light, golden crystals that bake and blend just like white sugar — the perfect one-to-one natural replacement for everyday sweetness. Mild in flavor and beautifully unrefined, it’s coconut sugar reimagined. And guess what - it doesn’t taste like coconut. Twice a day, farmers harvest sweet nectar from the tiny flowers that cluster at the crown of each coconut palm — not from the coconut “nut” itself. Slow evaporation of the nectar brings a mild honeyed flavor with no hint of coconut. Coconut sugar has a naturally low glycemic index, so it won't cause the quick spike and crash of cane sugar. Unrefined and unbleached, it retains minerals from the earth, like potassium, calcium, magnesium, zinc and others, so you can feel good knowing you’re sweetening life just as nature intended.
