JOB SUMMARY


To effectively manage the Brewing process up to bright beer collection, so as to ensure products conform to pre-determined and defined standards.



PRINCIPAL DUTIES

a)      The utilization of materials, manpower, equipment, and services to ensure that the Brewing process is conducted per schedule and all parameters according to formulas.

b)     When needed, requests to take corrective measures whenever quality standards in the brew are out of range of pre-determined specifications. Consultation with the Head Brewer must occur first in instances of major deviations.

c)      Complete brew log(s) with all times, PH, brix, and calculation of efficiency, thermaload, and percentage of evaporation to keep parameters in range and to reduce losses in extracts.

d)     Maintain organization of all raw materials in pallets and ensure that they are in good and safe condition.


Responsibilities:

1.      Maintain Standards of:

a)      Product Quality and Efficiency (Losses)

b)     Plant hygiene (Health & Safety Regulations).

c)      Plant and Process Efficiency.

d)     Safety and General Housekeeping

e)      Clean all Equipment, Installations, and Brewhouse Areas.



Implementation of the Following:

f)      Brewing Programs

g)     Cleaning Schedules for Equipment necessary for Use in these Programs

h)     Adequate Record-Keeping of the Following:

WIP (Liquid Movement Transactions

Accounting for Raw Materials Usage

Mechanical and Electrical Issues

i)       Assist with Troubleshooting of all Processing Problems

j)       Provide Guidance Instructions, Directions, and Advice to Process Integrators and Technicians.

k)     Responsible for Brewhouse CIP and Inspection.

l)       Monitoring and Control of Product and Process Parameters (Specifications Through Process Sheet Results)

m)   Reduce Losses to Within Specified Parameters during Processing

n)     Reception of Raw Materials, Organization, and Inventory.

o)     Report Failures of Equipment and Facilities; Participate in its Repair


GENERAL DUTIES

Ensures Non-Supervisory Compliance Regarding the Following:

Quality Management System

Food Safety

Total Productive Management (TPM)

Health, Safety, & Environmental Management System

Fulfill legal obligation with regards to Occupational Safety & Health requirements as stipulated in:

The OSH Act 2004 as a supervisor


QUALIFICATIONS AND EXPERIENCE

B.Sc. Degree in Related Sciences e.g., Chemistry, Microbiology, Food Technology, Chemical Engineering, Process Engineering etc.

·        At least one year’s previous working experience in brewing environment

·        Exposure to Brewing Technology


KNOWLEDGE AND SKILLS

·        Must be knowledgeable in the operation-based control systems

·        Must be computer literate

·        Efficiency calculations, losses, thermaload, and percentage of evaporation
